  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 1 cup frozen corn
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp taco seasoning
  • 1 cup crushed tortilla chips (for topping)

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Sauté the chopped onion in the same skillet until translucent.
  3. In your slow cooker, combine browned beef, sautéed onion, black beans, diced tomatoes (with juices), corn, and taco seasoning. Stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 10 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
  6. Serve hot topped with crushed tortilla chips.
