  • 4 oz beef bacon, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Chop carrots, celery, and onion into uniform pieces.
  2. In a large pot over medium heat, cook the diced beef bacon until crispy (about 5 minutes). Drain excess fat if desired.
  3. Add onions and garlic; sauté until fragrant (about 3 minutes). Then add chopped carrots and celery; cook until slightly softened.
  4. Stir in rinsed lentils, vegetable broth, and bay leaves. Bring to a boil; reduce heat to low. Cover and simmer for about 30 minutes until lentils are tender.
