  • 1 ham hock (or 2 cups shredded ham)
  • 1 cup dried navy beans (soaked overnight)
  • 1 cup chopped carrots
  • 1 cup chopped celery

  • 3 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Soak the dried beans overnight in water. Rinse before use if short on time.
  2. Chop the carrots, celery, onion, and garlic.
  3. In the crockpot, layer the soaked beans, veggies, and ham.
  4. Pour in enough chicken broth to cover the ingredients and add bay leaves.
  5. Season with salt and pepper as desired.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, remove the ham hock if used, shred any remaining meat back into the soup, and serve warm.
