  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup whole milk
  • Green food coloring
  • For Frosting:
  • 2 cups powdered sugar
  • ½ cup unsalted butter (softened)
  • 3 tbsp heavy cream
  • 1 tsp peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with colorful cupcake liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat softened butter until creamy. Gradually add granulated sugar until light and fluffy.
  4. Add eggs one at a time followed by vanilla extract; mix until combined.
  5. Gradually add dry ingredients alternately with milk until just mixed. Stir in green food coloring for desired hue.
  6. Fill muffin tins two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
