  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, sliced
  • 3 medium Yukon Gold or Russet potatoes, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set your Instant Pot to sauté mode. Heat olive oil and brown the cubed beef on all sides, seasoning with salt and pepper.
