  • 1 cup diced cucumber
  • 1/2 small red onion (thinly sliced)
  • 1/4 cup fresh basil leaves (torn)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Cook the orzo: In a large pot of salted boiling water, cook 1 cup of orzo pasta according to package directions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. 2. Prepare the veggies: While the orzo cooks, dice the cucumber and thinly slice the red onion. Soak the onion in cold water if desired.
