  • 8 oz spicy chorizo
  • 1 cup green or brown lentils (rinsed)
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Crumble in the chorizo and cook until browned, about 5 minutes.
  2. Add chopped onion, garlic, carrots, and celery; sauté until softened, about 3 minutes.
  3. Stir in lentils and canned tomatoes (undrained). Mix well.
  4. Pour in vegetable broth and add cumin, paprika, salt, and pepper. Stir to combine.
  5. Close the lid securely and set to high pressure for 20 minutes.
  6. Allow natural pressure release for 10 minutes, then quick release any remaining steam. Stir before serving.
