  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 4 cloves fresh garlic (minced)
  • 1 cup bell peppers (sliced, mixed red and green)
  • 1 cup broccoli florets
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 cups cooked jasmine or basmati rice

Instructions

  1. Chop the chicken and vegetables into bite-sized pieces.
  2. In a bowl, mix soy sauce, minced garlic, and sesame oil. Add chicken, toss to coat, and marinate for 15 minutes.
  3. Heat oil in a large skillet over medium-high heat. Cook marinated chicken until golden brown (5-7 minutes).

  5. Mix cornstarch with 2 tbsp water in a small bowl until smooth. Pour over chicken and vegetables; stir until the sauce thickens.
