  • 1 medium cucumber, diced
  • 3 tablespoons lime juice (freshly squeezed)

  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the corn in boiling salted water for 5-7 minutes until tender. Cool and cut off kernels.
  2. Dice the cherry tomatoes, bell peppers, and cucumber into bite-sized pieces.
  3. In a large bowl, combine corn kernels with chopped veggies.
  4. Whisk together olive oil, lime juice, salt, and pepper in a small bowl. Pour over the salad mix.
  5. Toss gently until evenly coated; garnish with cilantro.
  6. Serve chilled or at room temperature.
