  • 4 cod fillets (6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup fresh herbs (parsley, dill, chives), chopped
  • 2 large parsnips, peeled and chopped
  • 1/2 cup heavy cream
  • 2 tbsp olive oil (divided)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Boil parsnips in salted water until tender (about 15-20 minutes). Drain, return to the pot, add heavy cream and lemon juice, then blend until smooth. Season with salt and pepper.
  3. In a bowl, mix panko breadcrumbs with chopped herbs, olive oil, salt, and pepper until combined.
  4. Pat the cod fillets dry, drizzle with olive oil, and press the herb mixture evenly onto each fillet.
  5. Place the cod in the prepared baking dish and bake for 15-20 minutes until golden brown.
  6. Serve the cod on a bed of parsnip puree, garnished with fresh herbs or lemon if desired.
