Easy Roasted Tomato Soup is a comforting and vibrant dish that brings warmth to any rainy day. Ingredients

  • 2 lbs ripe tomatoes, halved
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, combine the halved tomatoes, chopped onion, and minced garlic. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Roast for 30-35 minutes until caramelized.
  4. Let cool slightly, then transfer to a blender. Add vegetable broth and blend until smooth.
  5. Pour the mixture into a pot over medium heat. Stir in fresh basil and simmer for 10 minutes.
  6. Serve warm, garnished with extra basil or a drizzle of olive oil.
