  • 1 pinch saffron threads (soaked in 2 tbsp warm water)
  • 4 cups vegetable broth
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil

  1. In a large pot over medium heat, add olive oil. Sauté onion and garlic until fragrant and translucent (about 5 minutes).
  2. Stir in carrots and celery; cook for an additional 5 minutes until slightly softened.

  4. Lower heat to simmer; stir in chickpeas and saffron water. Simmer uncovered for about 20 minutes.
