  • 1 red bell pepper, julienned

  • Juice of 2 limes
  • 3 tbsp fish sauce
  • 1 tbsp granulated sugar

Instructions

  1. Rinse shrimp under cold water and pat dry.

  3. Whisk together lime juice, fish sauce, and sugar in a separate bowl until well mixed.
  4. Heat a skillet over medium-high heat; add shrimp and cook for about 2 minutes per side until pink and opaque.
  5. In a large mixing bowl, combine cooked shrimp with the pomelo mixture and pour the dressing over it.
