  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the white beans and prepare the vegetables: chop the kale, dice the onion, and mince the garlic.
  2. In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add garlic during the last minute.
  3. Transfer sautéed onions and garlic to your slow cooker. Add white beans, kale, carrots, thyme, bay leaf, and vegetable broth.
  4. Season with salt and pepper; stir gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
