  • 1 lb boneless skinless chicken thighs
  • 2 cups fresh mixed vegetables (bell peppers, broccoli, snap peas)
  • 8 oz wide egg noodles
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or brown sugar
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Prep all ingredients by chopping vegetables and mincing garlic for easy assembly.
  2. Heat oil in a large skillet over medium heat. Season chicken thighs with salt and pepper and cook until golden brown, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Then, add chopped vegetables and cook for another 5 minutes until slightly softened.
  4. Stir in egg noodles with enough water (or broth) to cover. Cook until noodles soften, approximately 8 minutes.
  5. In a separate bowl, whisk together soy sauce, sesame oil, and honey or brown sugar. Pour over noodle mixture and stir well.
  6. Cook for an additional 2 minutes until heated through. Serve hot.
