Ingredients

  • 4 cups chopped kale (about 1 bunch)
  • 2 medium yams (about 2 cups cubed)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the yams into bite-sized pieces. In a bowl, toss them with 2 tablespoons of olive oil, salt, and pepper until well coated.
  3. Spread the yam cubes on a parchment-lined baking sheet and roast for 25-30 minutes until tender and slightly crispy.
  4. While the yams roast, wash the kale thoroughly. Remove stems and tear leaves into pieces. Place in a large bowl, drizzle with remaining olive oil, and massage gently until tender.
  5. Once the yams are roasted, allow them to cool slightly before combining them with the massaged kale in a serving bowl. Squeeze fresh lemon juice over the top.
  6. Toss gently to combine and serve immediately or chill for enhanced flavors.
