  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup dried apricots, chopped
  • 1/2 cup slivered almonds, toasted
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 1 cup low-sodium chicken broth
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the dried apricots and toasting the almonds in a skillet over medium heat until golden.
  2. Set the Instant Pot to 'Sauté', add olive oil, season chicken with salt and pepper, and brown for about 5 minutes.
  3. Stir in minced garlic and grated ginger until fragrant (about 1 minute).
  4. Add chopped apricots, slivered almonds, ground cumin, honey, cinnamon stick, and chicken broth; mix well.
  5. Secure the lid and set to 'Manual' mode at high pressure for 10 minutes. Allow natural release for 5 minutes before venting any remaining steam.
  6. Serve hot with cooking liquid drizzled over the top.
