  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots (fresh)
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat vegetable oil and eggs until combined. Stir in grated carrots.
  4. Pour wet ingredients into dry mixture and gently fold until just combined. If using walnuts, fold them in now.
  5. Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  6. For the frosting, blend softened cream cheese with powdered sugar until fluffy. Spread between layers and on top of cooled cakes.
