  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place halved cherry tomatoes on the baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Roast for 20 minutes until soft and caramelized.
  3. In a medium saucepan, bring 1 1/4 cups water to a boil. Stir in couscous and a pinch of salt, then remove from heat and cover for 5 minutes until liquid is absorbed.
  4. In a large bowl, combine cooked couscous with roasted tomatoes, minced garlic, chopped basil, remaining olive oil, and lemon juice. Mix well.
  5. Taste and adjust seasoning if needed. Serve immediately or refrigerate for a refreshing salad.
