  • 1 lb fresh pasta sheets or lasagna noodles
  • 2 medium sweet potatoes (about 1 lb), baked and mashed
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
  • 4 tbsp butter for sauce
  • 8 sage leaves

Instructions

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes wrapped in foil for about 45 minutes until tender.
  2. Allow cool, then scoop out the flesh into a bowl. Mix in ricotta, Parmesan, nutmeg, salt, and pepper until smooth.
  3. Lay out pasta sheets; place one tablespoon of filling at one end and fold over to create pockets.
  4. Boil salted water; cook caramelle for about 3 minutes until they float.
  5. In a skillet, melt butter and sauté sage leaves until crispy (about 1 minute).
  6. Drain caramelle and toss in sage butter sauce before serving.
