  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • 2 large eggs
  • ⅓ cup vegetable oil
  • ⅓ cup whole milk
  • ¼ cup melted butter
  • ½ cup brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, and milk until smooth.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. For the topping, combine melted butter with brown sugar and cinnamon until crumbly.
  6. Layer half of the batter in the pan, sprinkle half of the crumb topping over it, add remaining batter followed by the rest of the crumbs. Bake for 40-50 minutes or until a toothpick comes out clean.
