  • 1 lb lean ground turkey
  • 3 medium zucchinis, sliced into thin rounds
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Sprinkle zucchini slices with salt and let them sit on paper towels to draw out moisture.
  3. In a skillet over medium heat, brown the ground turkey (about 5-7 minutes), breaking it into crumbles. Drain excess fat and stir in half of the marinara sauce.
  4. In the prepared baking dish, spread a layer of marinara sauce, followed by zucchini slices, half of the turkey mixture, and dollops of ricotta. Repeat the layers, finishing with mozzarella on top.
  5. Cover with foil (not touching cheese) and bake for 30 minutes. Remove foil for the last 10 minutes to melt the cheese.
  6. Allow to rest for five minutes before serving.
