Turkey spring rolls are a mouthwatering appetizer that combines crispy rice paper with savory ground turkey and fresh vegetables.   • 1 lb lean ground turkey
  • 12 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup finely chopped cabbage (green or purple)
  • 1/4 cup chopped green onions
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup sweet chili sauce

Instructions

  1. In a large skillet over medium heat, sauté ground turkey with minced garlic until browned. Add shredded carrots and chopped cabbage; cook until softened. Stir in soy sauce for flavor.
  2. Soften rice paper wrappers by dipping each into warm water for about 10 seconds until pliable.
  3. Place the softened wrapper on a clean surface. Spoon about two tablespoons of the turkey mixture onto the bottom third of the wrapper. Fold in each side and roll tightly from bottom to top.
  4. Heat oil in a large pan over medium heat. Fry each spring roll until golden brown on both sides (about three minutes per side). Drain on paper towels.
  5. Serve with sweet chili sauce drizzled on top or alongside for dipping.
