  • 1 cup fresh baby spinach, chopped
  • 1 cup crumbled feta cheese
  • ½ cup red bell pepper, diced

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a skillet over medium heat, add olive oil and sauté diced red bell pepper for about 3 minutes. Add spinach and cook until wilted, about 2 minutes.
