Stuffed with caramelized bell peppers, zucchini, and red onions, these wraps are slathered in creamy hummus and topped with tangy feta cheese—all wrapped in warm tortillas.   • 4 whole wheat tortillas
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup zucchini, sliced
  • 1 medium red onion, chopped
  • 2 tbsp olive oil
  • 1 cup hummus
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss bell peppers, zucchini, and red onion in olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 20-25 minutes until golden brown.
  4. Spread hummus on each tortilla and layer with roasted veggies and feta cheese.
  5. Roll each tortilla tightly and slice diagonally. Serve immediately or enjoy later!
