  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cooked quinoa or brown rice
  • 2 tbsp olive oil

  • 1 tsp paprika
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp tahini
  • Salt to taste

Instructions

  2. Toss cauliflower florets and chickpeas in a bowl with olive oil, cumin, paprika, and salt until evenly coated.

  5. In a small bowl, whisk together tahini, lemon juice, salt, and water until smooth; adjust for consistency.
