  • 1 lb beef sirloin, sliced into thin strips
  • 1 cup mixed bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced into rings
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • ½ cup low-sodium beef broth
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil

Instructions

  1. Slice beef sirloin against the grain and chop bell peppers and onion.
  2. In a bowl, whisk together soy sauce, beef broth, minced garlic, and cornstarch until smooth.
  3. Heat oil in a skillet over medium-high heat. Add sliced beef in batches, cooking until browned (about 5 minutes).
  4. Stir in onions and bell peppers; cook until softened yet crunchy (around 3 minutes).
  5. Reduce heat slightly and pour in the prepared sauce. Stir well and simmer until thickened (2-3 minutes).
  6. Plate the pepper steak on its own or over rice/noodles with extra sauce drizzled on top.
