  • 1 can (5 oz) quality tuna packed in olive oil, drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Drain the tuna and chickpeas; rinse the chickpeas under cold water. Chop cherry tomatoes, cucumber, red onion, and parsley into bite-sized pieces.
  2. In a large mixing bowl, combine drained tuna and chickpeas with the chopped vegetables. Gently toss together.
  3. In a small bowl or jar, whisk together lemon juice and olive oil; season with salt and pepper. Drizzle this dressing over the tuna-chickpea mixture.
  4. Toss everything gently until well coated in the dressing.
  5. Divide into meal prep containers; layer greens at the bottom if desired.
