  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef or Italian sausage until fully cooked. Drain excess grease and set aside.
  2. In the same pot, sauté diced onion and minced garlic until onions are translucent (about 5 minutes).
  3. Stir in crushed tomatoes and chicken broth; bring to a simmer.
  4. Add broken lasagna noodles and cook according to package instructions until al dente (approximately 10 minutes).
  5. In a separate bowl, combine ricotta cheese with Italian seasoning, salt, and pepper.
  6. Serve soup in bowls topped with dollops of ricotta and shredded mozzarella cheese.
