  • 2 medium sweet potatoes, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed

  • 3 tablespoons tahini
  • 2 tablespoons pure maple syrup
  • Juice of 1 lemon
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden and tender.
  2. Rinse quinoa under cold water. In a saucepan, combine 1 cup quinoa with 2 cups water or vegetable broth. Bring to a boil, then simmer for about 15 minutes until liquid is absorbed.
  3. Drain and rinse chickpeas; toss with olive oil, garlic powder, and paprika. Roast on a baking sheet alongside sweet potatoes for about 20 minutes until crispy.
  4. In a small bowl, whisk together tahini, maple syrup, lemon juice, salt, and enough water to achieve desired consistency.
  5. Assemble bowls by layering cooked quinoa as the base. Top with roasted sweet potatoes, crispy chickpeas, and fresh spinach.
  6. Drizzle generously with maple tahini dressing before serving.
