  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain Greek yogurt
  • 1 medium cucumber (about 8 oz)
  • 1 cup cherry tomatoes (halved)
  • 1/2 medium red onion (thinly sliced)
  • 4 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic (minced)
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh dill (for tzatziki)

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
  2. Prepare the Tzatziki: Grate half of the cucumber and squeeze out excess moisture. In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, salt, and pepper.
  3. Grill the Chicken: Preheat grill to medium-high heat. Grill chicken for about 6–7 minutes on each side until fully cooked (165°F internal temperature). Let rest before slicing.
  4. Assemble the Salad: Chop remaining cucumber and red onion. In a large serving bowl, layer mixed greens with tomatoes, cucumbers, red onion, and sliced chicken.
  5. Drizzle with Tzatziki: Top salad with crumbled feta cheese and generously drizzle with tzatziki before serving.
