  • 1 cup farro
  • 2 cups Brussels sprouts, thinly sliced
  • 1 medium carrot, diced

Instructions

  1. Cook the farro according to package instructions (usually simmer for 25-30 minutes until tender). Drain and set aside.
  2. While the farro cooks, wash and trim the Brussels sprouts, then slice them thinly. Dice the carrot and chop the green onions.
  3. In a large skillet or wok, heat olive oil over medium-high heat. Add garlic followed by Brussels sprouts and carrots. Stir-fry for about 5 minutes until veggies are tender yet crisp.
  4. Add cooked farro to the skillet. Stir in soy sauce and mix well until everything is evenly coated. Cook for another minute to meld flavors.
  5. Garnish with chopped green onions before serving.
