  • 2 medium eggplants (about 1 lb), sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup shredded fresh mozzarella cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • ¼ cup fresh basil leaves, chopped
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice eggplants lengthwise into thin strips, sprinkle with salt, and let sit for 30 minutes. Pat dry.
  2. In a bowl, mix ricotta, mozzarella (reserve some for topping), Parmesan, basil, salt, and pepper until well combined.
  3. Arrange eggplant slices on a baking sheet, drizzle with olive oil, and roast for about 15 minutes until softened.
  4. Once cooled, place about two tablespoons of filling on one end of each eggplant slice and roll tightly.
  5. Spread marinara sauce on the bottom of a baking dish, place rollatini seam-side down, cover with more sauce and remaining mozzarella.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
