  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 medium onion, chopped
  • 1 can (15 oz) pinto beans (low sodium)
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef and chopped onion for about 5-7 minutes; drain excess fat.
  3. Stir in half of the enchilada sauce and let simmer for a few minutes.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the tortillas and top with both cheeses.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until bubbly.
