Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 cups fresh blueberries
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press this mixture firmly into the bottom of a springform pan to form the crust.
  2. In another bowl, beat softened cream cheese and remaining sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
  3. Gently fold in fresh blueberries without mashing them.
  4. Pour the blueberry filling over the prepared crust and bake for 55-60 minutes until set but slightly jiggly in the center.
  5. Turn off the oven and let the cheesecake cool inside with the door ajar for an hour to prevent cracking.
  6. Cool completely before refrigerating for at least four hours or overnight. Slice and serve chilled.
