  • 4 cups fresh broccoli florets (approximately 300g), shaved thin
  • 1 cup dried cranberries (150g)
  • ½ cup sunflower seeds (75g)
  • ½ red onion, thinly sliced
  • ¼ cup extra virgin olive oil (60ml)
  • 2 tbsp freshly squeezed lemon juice (30ml)
  • 1 tbsp honey or maple syrup (15g)
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the broccoli florets. Using a sharp knife or mandoline, shave them into thin ribbons.
  2. In a large mixing bowl, combine the shaved broccoli, dried cranberries, sunflower seeds, and red onion. Toss gently.
  3. In a separate bowl, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper until smooth.
  4. Drizzle the dressing over the salad mixture and toss to coat evenly.
  5. Chill in the fridge for 15-20 minutes to allow flavors to meld.
