  • 3 medium Russet potatoes (about 1 lb)
  • ½ cup crumbled feta cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup plain breadcrumbs
  • Vegetable oil for frying (about 1 cup)

Instructions

  1. Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and mash.
  2. In a bowl, mix mashed potatoes with feta, Parmesan, and one egg until creamy.
  3. Shape the mixture into oval or round croquettes (about 2 tablespoons each).
  4. Beat the second egg in one bowl and place breadcrumbs in another. Dip croquettes in egg wash and coat with breadcrumbs.
  5. Heat vegetable oil in a deep frying pan over medium heat until shimmering.
  6. Fry croquettes in hot oil until golden brown on all sides (about 3 minutes per side). Drain on paper towels.
