  • 1 lb baby potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup pesto sauce (store-bought or homemade)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Boil baby potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Smash cooled potatoes gently using the bottom of a glass or potato masher.
  4. Drizzle olive oil over each smashed potato and season with salt and pepper.
  5. Bake for 25-30 minutes until golden brown and crispy around the edges.
  6. Add a spoonful of pesto on top of each potato, sprinkle with Parmesan cheese, then return to the oven for another 5 minutes until heated through.
