  • 1 cup Panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper.
  3. In one bowl, whisk the eggs. In another bowl, combine Panko breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast into the egg mixture first, then coat it in the breadcrumb mixture.
  5. Place the breaded chicken in the prepared baking dish and drizzle with olive oil.
  6. Bake for about 25-30 minutes until golden brown and cooked through.
  7. While the chicken bakes, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in soy sauce and simmer until slightly thickened.
  8. Serve hot, drizzled with garlic sauce.
