  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp fresh tarragon, chopped
  • 1 cup low-sodium chicken broth
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Season chicken thighs with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering.
  3. Sear chicken thighs skin-side down for about 5-7 minutes until golden brown. Flip and remove from skillet.
  4. In the same skillet, sauté garlic until fragrant, then add chicken broth and bring to a simmer. Stir in heavy cream and tarragon.
  5. Return chicken to the skillet, spoon sauce over it, and transfer to the oven.
  6. Bake for 20-25 minutes or until internal temperature reaches at least 165°F (74°C). Serve warm.
