  • 1 cup shredded sharp cheddar cheese

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean.
  2. Bake the potatoes directly on the oven rack for about 45 minutes until tender. Allow them to cool slightly.
  3. While the potatoes bake, fry the bacon in a skillet over medium heat until crispy (8-10 minutes). Drain on paper towels and chop into small bits.
  4. Slice the cooled potatoes in half lengthwise and scoop out most of the flesh, leaving enough to maintain their shape.
  5. Fill each skin with shredded cheddar cheese and sprinkle with bacon bits. Return to the oven for another 10-15 minutes until bubbly and golden.
