  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup fresh spinach (optional)
  • 1 tsp fresh thyme (or to taste)
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onion and mushrooms, mincing the garlic, and cutting the chicken into bite-sized pieces.
  2. In a large pot over medium heat, add oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add diced chicken along with salt and pepper; cook until no longer pink (6-7 minutes).
  4. Stir in sliced mushrooms; cook for an additional 5 minutes until softened.
  5. Pour in chicken broth; bring to a gentle boil then reduce heat to simmer for about 10 minutes.
  6. Stir in heavy cream and fresh thyme. If desired, add spinach at this stage. Serve hot.
