  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, garlic, Parmesan cheese, and seasoning. Mix gently to avoid tough meatballs.
  2. Form golf ball-sized meatballs and brown them in a large pot with olive oil over medium heat for about five minutes. Remove and set aside.
  3. In the same pot, add diced tomatoes (with juice), garlic, herbs, and chicken broth; simmer for ten minutes.
  4. Stir in heavy cream; return meatballs to the pot along with fresh spinach.
  5. Simmer everything on low heat for an additional fifteen minutes until flavors meld and meatballs are cooked through.
