  • 4 slices thick-cut bacon, chopped
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 medium sweet onion, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3 cups low-sodium vegetable broth
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode; add chopped bacon and cook until crispy (about 5 minutes). Remove bacon and drain on paper towels; retain the fat in the pot.
  2. In the same pot, sauté onions, celery, and garlic until softened (about 3–4 minutes).
  3. Stir in potatoes and vegetable broth; season with salt and pepper.
  4. Seal the Instant Pot lid; cook on high pressure for 7 minutes.
  5. Carefully release pressure; add clams and heavy cream. Stir gently to combine.
