  • 1 lb fresh clams
  • 4 slices thick-cut bacon
  • 2 medium Yukon Gold potatoes (diced)
  • 1 medium sweet onion (chopped)
  • 2 celery stalks (finely chopped)
  • 1 cup heavy cream
  • 3 cups low-sodium chicken broth
  • 1 tsp fresh thyme

Instructions

  1. Rinse clams under cold water and discard any open or cracked shells. In a large pot, add half a cup of water and steam the clams until they open, about 5 minutes.
  2. In another pot, cook chopped bacon over medium heat until crispy. Remove and set aside while keeping the drippings in the pot.
  3. Sauté onions and celery in the bacon drippings until softened, about 5 minutes.
  4. Add diced potatoes and thyme; pour in chicken broth and bring to a boil. Reduce to simmer until potatoes are fork-tender (about 15 minutes).
  5. Stir in steamed clams along with their juices and heavy cream; simmer for an additional 5 minutes on low heat.
  6. Serve hot with crispy bacon bits on top.
