  • 1 cup red lentils
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 3 cups vegetable broth (low sodium)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 2 cups fresh spinach or kale

Instructions

  1. In a large pot over medium heat, add 1 tbsp oil. Sauté the chopped onion until translucent.
  2. Add minced garlic and grated ginger; stir for about one minute until fragrant.
  3. Sprinkle in cumin, coriander, and turmeric; toast spices for about 30 seconds.
  4. Pour in red lentils and vegetable broth; bring to a boil then reduce to a simmer for 20 minutes until lentils are tender.
  5. Stir in coconut milk and let it simmer for another five minutes.
  6. Fold in spinach or kale until wilted. Season with salt and pepper to taste.
  7. Serve hot over rice or with naan.
