  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 2 cups fresh spinach or kale
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 16 oz potato gnocchi

Instructions

  1. Sauté aromatics: In a large pot over medium heat, drizzle olive oil and add diced onions with minced garlic. Sauté until onions are translucent (about 3 minutes).
  2. Add vegetables: Stir in chopped carrots and celery; cook for another 5 minutes until softened.
  3. Cook the chicken: Add chicken breasts and pour in chicken broth to submerge. Season with salt, pepper, oregano, and thyme; bring to a boil then simmer for about 10 minutes.
  4. Shred the chicken: Remove chicken from pot and shred using two forks; return shredded chicken to the soup.
  5. Incorporate gnocchi: Stir in gnocchi and cook according to package instructions until they float.
  6. Finish with cream: Stir in heavy cream and add leafy greens just before serving.
