  • 1 medium head cauliflower (about 2 cups florets)
  • 6 slices thick-cut bacon
  • 8 oz penne or fusilli pasta
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Trim the cauliflower into florets and steam until tender, about 10 minutes.
  2. Cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Drain on paper towels.
  3. In a blender, combine steamed cauliflower, half of the bacon, heavy cream, garlic, salt, and pepper. Blend until smooth.
  4. Boil salted water and cook pasta according to package instructions; drain and reserve 1 cup of pasta water.
  5. In the skillet with leftover bacon grease, add drained pasta and cauliflower sauce. Mix well, adding reserved pasta water as needed for desired creaminess.
  6. Serve topped with remaining bacon bits and grated Parmesan.
