  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • Salt and pepper to taste

Instructions

  1. Rinse the asparagus under cold water, trim tough ends, and chop into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent, then add garlic and cook until fragrant (about 1 minute).
  3. Add chopped asparagus and vegetable broth to the pot. Bring to a gentle boil, then reduce heat and simmer for about 15 minutes until asparagus is tender.
  4. Using an immersion blender or regular blender in batches, puree the soup until smooth. For a chunkier texture, blend only half.
  5. Stir in heavy cream and season with salt and pepper to taste. Warm through on low heat for a few minutes.
