  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 4 cups fresh kale, chopped
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 6 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add diced onion and carrots; sauté until softened (about 5 minutes). Stir in minced garlic for another minute.
  2. Add chopped kale; cook until wilted (approximately 3 minutes).

  4. Season with oregano, salt, and pepper. For a creamier texture, blend part of the soup using an immersion blender.
